Like love, chocolate is a universal language, but also like love, the French may just do it best. The focus of today's class, in très Francophile style, is on seasonal cocoa-centric pleasures: cool, summery desserts like sorbet, frozen soufflé, and a chocolate-chestnut terrine. Also on the menu is a chocolate fondant with crème anglaise — the kind of tricky, just-intimidating-enough recipe that we really need an expert to teach us to make. Tears, if they must be shed, should be wept while eating chocolate, not making it.
