Chi Lin is a stunning, recently opened Chinese restaurant in West Hollywood. The dining room is beautified by hundreds of lanterns that illuminate the walls that are strewn with thousands of real butterflies, while the bar is seductive and stunning, mostly black enlivened by scarlet touches. The specialty cocktail list features a preponderance of vodka-based drinks, but thankfully done in not-so-common ways, such as the Curry Blossom, featuring Grey Goose Vodka, apricot liqueur, curry leaf, and raspberry orgeat. Another vodka-based drink, Pearl of the Orient, might be the standout of all of Chi Lin’s cocktails. It’s a refreshing, frothy concoction of Belvedere Intense Vodka, green chartreuse, grapefruit, Jerry Thomas Bitters, and egg white. The exoticism of the Spice Route, made with Madagascar Tru Vanilla Vodka, tarragon, lime, and cumin is another unexpected combination. Whiskey drinkers should enjoy the Formosa Manhattan, a tasty medley of Maker’s Mark infused with black tea, vermouth, Galliano, and grapefruit bitters. Those with a taste for tequila should imbibe the East by Southwest. Easy to drink and not too sweet, it stars Patron Silver, with co-stars that include Benedictine, tamarind syrup, Cherry Heering, and lime, topped with a grapefruit salted rim. As far as the food goes, it seems everyone has a kale salad on their menu nowadays, but Chi Lin’s is a deliciously unpredictable take on this new staple, topped with crispy shiitake mushrooms, white asparagus, tofu skins, and sesame vinaigrette, while the 5-Spice Smoked Shaved Beef on Crispy Scallion Pastry perfectly accompanies Chi Lin’s cocktails.
