Since Mélisse first opened its doors in 1999, Josiah Citrin and his restaurant have been a tour de force in the world of fine dining and a fixture in California’s culinary landscape. Mélisse is known as much for its refined setting as it is its artistic, flawless cuisine. Melisse is one of only three restaurants in Los Angeles to earn two Michelin stars and remains the number one rated restaurant in the Zagat Guide since 2003. Josiah is also author of the beautiful cookbook, In Pursuit of Excellence which showcases many of his signature dishes.
On Wednesday, April 30th, Josiah will host a pressure cooking class in partnership with the award winning cookware, Fissler Vitaquick Pressure Cooker (www.fisslerusa.com).
The pressure cooker trend has “caught on” with many of LA’s famous chefs who believe that one can develop remarkable flavors in a short amount of time with this method of cooking. Josiah will prepare and show you how valuable a good pressure cooker can be when he makes the following dishes.
Pressure Cooked Beans, Clams, Sausage and Lemon
Wild Striped Bass, Tomatoes, Capers, Basil, Farro and Kale
Pressure Cooked Rigatoni with Meat Sauce, Baked with Cheese
