With talk of food miles and free-range vs organic never far from the headlines, slow food has truly come into its own. Antithetical to the practices of big, global corporations, the movement promotes goods from small, local companies, embracing fair-trade principles and produced using ethical and environmentally responsible techniques. The 30 stalls at Southbank's market prove that food and drink do indeed taste better when they're sustainable, and include local London heroes Utobeer (run by the owners of Borough bar the Rake) and East Dulwich's Born and Bread Organic Bakery.
