There's no need for vegans to feel left out this Thanksgiving season with the Spork sisters on hand. Jenny, a trained chef who earned a BA in environmental studies, and Heather, who also works for an environmental nonprofit, offer up a wholesome menu that will leave you feeling healthy and energetic instead of bloated and couch-bound. Students learn how to make roasted seitan and gravy; spelt stuffing with sautéed green apples and cashews; ginger-scented cranberry sauce; and for dessert, a delicious and nourishing spiced pumpkin pie.
