In the book, the editors tenaciously root up LA's less-traveled restaurants, using tabbed groupings to break down everything from noodle shops and chophouses to patisseries and panaderias. In this discussion, the panelists similarly cut through the fog of fast food, taquerias, and flashy gimmickry in search of that elusive beast known as "Los Angeles cuisine."
