More Flavor: Food/Wine Vegetarian Global Tour Cooking Class: India

If your version of vegetarian cooking is limited to opening a salad-in-a-bag and chopping up a block of tofu, you may want to swing through this cooking class. This month the veggie tour takes us to India, where they know how to make going meatless tasty. The menu includes spicy stuffed baby eggplants called bharvaan baingan, the classic lentil dish shahi daal, and the easiest cauliflower recipe around, aloo gobi. Finish with Indian-inspired cashew, carrot, and cardamom cupcakes with cashew cream-cheese frosting (try saying that one ten times fast).
